The Refuge, Manchester.

I've lived in Manchester for almost 30 years but have never set foot in the Palace Hotel, until just now anyway. I recently spent over ten hours at The Refuge in recent weeks photographing the interior, the food, the cocktails and the staff. But the two shoots don't even seem enough time to capture everything here. The interior alone is breathtaking, surely this must be the most impressive bar and restaurant in Manchester now? It's a photographer's dream, the beautiful and colourful dishes along with the grand interior and the most exquisite light even on a dull day do really make my job a whole lot easier. Their hard work and attention to detail have really paid off.

Small Plates: Gloucester Old Spot pork belly, cumin, chimichurri.
Black Daal.
Smoked feta, beetroot, hazelnut, dill.
Slow cooked Ox Cheek, egg, Sriracha.
Salt cod croquettes, parsley aioli.
Lamb shawarma.
Tuna Tartare. 
Wood-fired Oyster & Natural Oyster.
Fattoush, sumac, tomato, cucumber.

Whole Sea Bass, pine nuts, coriander, preserved lemon.
Radicchio Salad.
Tiger Prawns.
Ceviche.
Fig, halloumi, basil, mustard seed.
The Volta Dexter Beef Burger, mac sauce, pickles, cheddar with fries.
Whole leg of slow roast lamb with a selection of sides and small plates.
Whole roast chicken, citrus, maple.

Pear and Hazelnut Tarte Tatin with espresso custard.
White chocolate and cardamom brûlée & Apple Tart with Madagascan vanilla ice cream.
